COCONUT MOONCAROONS

Introducing Coconut Mooncaroons!  These little gems taste seriously good AND contain some serious goods: 
+ Healthy fibre and fat from all that coconut

+ Magnesium and antioxidant rich raw cacao

+ Mood boosting and hormone balancing help from maca and tocos

+ Pinch of sweet from some natural non-gmo stevia

And voila, you’ve got yourself a tasty and cleanse/detox/resolution compliant treat. it’s basically a bounty bar living its best life in ball form.

Filling:

3 cups unsweetened shredded coconut
1/2 cup coconut oil (melted)
1/4 cup coconut butter
1 tbsp mct oil
1 tbsp Tocos
1 tsp maca
pinch of salt
sweetener to taste (i used @livenaturalnowBetter stevia, but you could swap maple syrup, honey, monk fruit)

Add 2 cups of the shredded coconut with the coconut oil and coconut butter in a food processor and mix for 1-2minutes or until well combined. Add in the rest of the ingredients, including the remaining cup of coconut (I like a little extra texture) and pulse until incorporated. Chill in the fridge (or freezer if you’re in a hurry) to help it firm up. Once you can handle it, scoop and roll into balls. Place back in the fridge/freezer until ready to coat. 

Magicacao shell: 
1/2 cup coconut oil (melted)
3/4 cup raw cacao
1/2 tbsp lacuma
1/2 tbsp maca
Sweetener to taste (optional)

Add ingredients to a bowl and mix well to combine. Dip coconut balls in to coat or drizzle mixture on top. Chill to set and store in a sealed container in the fridge or freezer, or load in a mug and share with your loved ones immediately. xx
